A slicer is a tool used in the culinary sector, which is generally useful for cutting sausages and meat.
It consists mainly of a sharp rotating blade, with variable diameter, on which the slurry that is to be cut is slid by means of a cart. On the slicer machine is also usually placed a wheel that allows to adjust the size of the cut which can vary from a few millimeters to about one centimeter. Cutting operations are performed on the right side of the blade, the one that cuts, while on the opposite side the blade is suitably shaped so that it does not cut and does not jeopardize the operator. The cut slice extends through the non-cutting edge of the blade and can be comfortably picked up by the operator.
Crank slicer
The first slicer was invented by Wilhelmus van Berkel in Rotterdam in 1898.
The first models of slicers were used through a cranking system, while the most recent ones generally use an electric motor.
It is generally equipped with two stones to sharpen the blade to the right and to the left, driven by the rotation of a trolley placed over the machine.
Nowadays slicers have also been made available for the home market, and not just for the business.
