Olive or olive tree (Olea europaea L., 1753) is a fruit plant. Originally from the Near East, it has been used since antiquity for food. Its fruits, olives, are used for extraction of oil and, to a lesser extent, for direct use in food. Due to the bitter taste due to the polyphenol content, the use of olives as fruits in the diet requires, however, specific treatments aimed at deamination (reduction of bitter principles), made with various methods.
